DIN 10510 European standard states 120 seconds of contact time of 55°C-65°C water and detergent with the dishes during the wash part of the cycle. The chart shows, the DIHR two minute cycle ensures the correct contact time when dealing with normal dishes. (DIN- DIN10510, SD- Soiled Dishes, ND- Normal Dishes, LD- Light Dishes, T- Trays, D-Dusting)
For heavy duty use the machine must have boiler elements suitable for recovery of the boiler’s water back to 85-90°C for wash after wash. Bacteria is killed at this temperature, items need approximately 15 seconds contact at this temperature. A drop in rinse temperature will create poor rinse quality and foaming in the wash tank. |
DIHR was established in Castelfranco Veneto (near Treviso, in north-eastern Italy) in 1985 as a distribution organization for the commercial kitchen business.
